Homemade wholemeal rye bread


600 g of homemade yeast
800 ml warm water (40 ° C)
150 g of whole wheat rye, or you can use crushed grains
150 g sunflower seeds
150 g of flax seeds
* option: you can add your preferred seeds to this bread
400 g of rye flour
400 g wheat flour
3 tablespoons dark brown syrup (sugar syrup, carob syrup or date syrup is suitable for this recipe)
2 tablespoons salt

First we make a homemade yeast. You can be inspired by Michael's video for the preparation of yeast. We then mix all the ingredients in a large bowl. Cover the bowl with a stretch of foil and let the mixture rest for 24 hours in a room at room temperature. After 12 hours, add flour to the mixture. We put the rested mixture into a wiped baking tin, which we cover with a stretch of foil and let the mixture rest for another hour. In the meantime, put a baking pan with water in the bottom of the oven. Bake the bread in an oven at 180 ° C for about an hour and a half. We can tell if the bread is ready when we stick a skewer in it, which must be dry. Serve bread spread with butter.
